Toad In The Hole

This traditional British dish is served with mashed potatoes and seasonal vegetables.


450g (1lb.) Sausages
1 onion, chopped
75g (3oz.) mushrooms, chopped
125g (4oz.) plain flour
2 eggs
200ml (7 floz.) milk
75ml (3 floz.) water
2 tablespoons freshly chopped thyme
salt and pepper to taste

Set oven to 200C (=400F). Cook sausages, chopped onion and chopped mushroom in a pan until browned, and place in a greased ovenproof dish. Place the flour in a bowl and add eggs, milk and water gradually, whisking all the time. Add the chopped thyme, salt and pepper to taste. Pour the mixture over sausages, and cook in a oven for 40 minutes until risen and golden.
