Victoria Cake

Queen Victoria had been in grief for the death of her husband, Prince Albert. This Victorian Cake was served at the tea party on returning to her official service. Victorian_Cake
Ingredients (for two 7" round tin)

4 oz (110 g) butter
4 oz (110 g) castor sugar
2 eggs, beaten
4 oz (110 g) self-raising flour (baking powder already added)
2 tablespoons raspberry jam
A little castor sugar to sprinkle on top

oil to grease
Baking paper

Process
  1. Cream the butter with the sugar till pale and fluffy
  2. Beat 2 eggs and add gradually to creamed mixture.
  3. Carefully fold in half the flour then fold in the rest.
  4. Pour into a greased and lined 7" round baking tin
  5. Bake at 375 F (170 C) for about 30-40 minutes or until well-risen, and golden.
  6. Cool on a wire rack then slice it half.
  7. Sandwich together with the jam and sprinkle with a little castor sugar.

Tips

You can try Lemon Curd or Strawberry jam instead of Raspberry jam.
